Garbanzo Bean and Artichoke Salad
Ingredients
- 1/4 cup balsamic vinegar
 - 1 tsp Dijon mustard
 - 1/4 cup olive oil
 - 2 ea 15 oz can garbanzo beans
 - 2 ea 15 oz can artichoke hearts
 - 1/3 cup grated parmesan cheese
 
Directions
Combine vinegar, mustard and olive oil in a bowl. Combine garbanzo beans with artichokes hearts in a large bowl and mix in dressing.
Add cheese, and toss well. Salt and pepper to taste.
