Artichoke Guacamole


  • 1 clove garlic
  • Juice of two limes
  • 1 cup Mayonnaise
  • 2 cans Napoleon quartered artichoke hearts, drained with half of one can set aside.
  • 2 cups Salsa
  • Salt to taste


In a food processer, chop the garlic clove until fairly fine. Add lime juice and pulse to combine.  Add the mayonnaise, artichoke hearts, and salsa. Pulse until mixture is smooth.  Add remaining artichoke hearts and pulse until roughly chopped and distributed throughout.  Salt to taste. Serve with tortilla chips, pita chips or your favorite cracker.
